I’m no expert but I think you should just give them time.
There is no way to really tame your koi fish. They are probably just in shock and scare and all you have to do is give them time and they will soon adjust and get used to their enviroment and come out of the darkness.
I wouldn’t hold a fish, and that could make them more afraid of you than ever. They’ll just have to get used to you being around. Do not suddenly approach the pond and feed them and make sure they know the food comes from your hand. Once they are comfortable around you, then they may come to you more. But please note this may take at least a year or more.

the old man is wrong and you don’t need to tame them the reasion they hide under the bridge is it protects them from direct sunlight as it offers shade most fish would pick the same location adding things like lilly pads can get them to swim around the pond more in that they will have more protective areas
ONLY feed them from the other end of the pool so they have to leave the confines of the bridge. Feed at the same time and same spot every day till these fish learn that they cannot live under the bridge like recluses but have to associate socializing with food.
no holding fish could harm them badly and cause problems later on i have just set up a Koi pond and you need to get a group of 4+ they will hide for a week because they think herons will come and eat them, but after a week they will come out it’s just about giving them time and a chance to realise where they are and that they are safe P.S if you don’t already have one get a pretend hereon (plastic) so that they get used to seeing it they wont be scared when you finally put one in, also they if you buy one herons will not eat your fish
I’d feed them away from the bridge, same times every day. Get the fish used to being fed from one spot and they’ll soon recognise this and start coming to this spot. They usually find somewhere to stay where they feel safe but will easily come out for food.
