He always swims at the top, with his nose out of the water, then sometimes acts like a dolphin bobbing his head out of the water.

Could be that the one on the top has been used to colder water than the ones at the bottom, as the water temperature rises so should the remainder of your koi rise to the top and act in a similar fashion.
The other 5 may be looking for food at the bottom as the other one maybe looking for food at the surface. if this is the case, the other 5 will see the 1 eating from the surface and will do it to. it happned to me lol.
