The two main causes of koi jumping is either poor water quality or a parasite infection.
I suggest that you check your ammonia nitrate and nitrite levels with test kits from your local aquarist shop. If the levels are ok then you should suspect a parasite infection. If you don’t have the technology or knowledge of how to take a skin scrape from a fish then maybe your local dealer will be able to offer such a service. Another possibility would be a local koi club or keen hobbyist who might be willing to check your fish.

It is very rarely an activity due to enjoyment and happiness but more often an indication of irritation.
Check the quality of the water and look for signs of any parasitic infection on the fish
