Cut a piece of PVC pipe long enough to reach the bottom of the pond. Pour the sinking pellets down this tube and allow them to sink to the bottom inside the tube where the Koi can’t get to them.
The sturgeons size will be related to the dimensions of the pond as well as total gallonage, but if it’s a typically designed pond I would expect he could very well get to the normal adult size of about 2 meters or roughly 7 feet. That assumes all of his needs are met of course.

most koi top out about 32-36 inches. and it is usually 2000 gallons per adult koi.
Sturgeons, i believe it depends on the species, but around40-70 inches.
Try using sinking foods or pond sticks.
